Mid-Autumn Festival 2012
We celebrated Mid-Autumn Festival 中秋节 this year at the Kan's. It was a fun and memorable night. There were lots of delicious foods and lots of lanterns to go around. The kids truly enjoyed it. Great company!

Safari Through the Rainforest
I volunteered at Ethan's school today for a "cooking" project - really it was just getting the ingredients ready for a safari trail mix of cashews, chocolate chips, dried bananas, dates and coconut. The kids made a bag made from paperbags for their trail mix snack and they each had a safari hat and binoculars. They all looked so cute! After getting their snacks together, they prepared for a safari treck down the rainforest (hallways of the school) where they looked at all the different rainforest animal pictures posted on the wall. They each got a surprise of either a monkey, boa constrictor, frog, butterly, etc. After a long treck, they sat down for some snacks. They also performed a couple of songs about the rainforest and I learned about the 4 layers of the rainforest - forest floor, understory layer, canopy layer and emergent layer. What a fun day!

Chocolate Zucchini Brownies
I'm always looking for more ideas to incorporate vegetables to the kids' diet. I found this recipe from Allrecipes.com called Grandma's Chocolate Zucchini Brownies and decided to try it. I had the kids help and was nervous about them seeing the zucchini, but the brownies were a big hit and tasted so yummie. This is a definitely a recipe to make again.

Kale Chips
I finally got around to making baked kale chips and was pleasantly surprised by how crispy they turned out. The kids were not too crazy about them, but still ate them.
